A good traditional English fish, and extremely popular. Haddock has a slightly stronger flavour than Cod and is slightly softer in texture - more fragile than the texture of Cod.

Fresh, firm texture and delicious

Tom's haddock fillets are a new favourite. They are nicely firm and work really well pan fried in butter (and lots of basting per Masterchef!). Sometimes haddock smells too fishy and this doesn't because it is so fresh.

Great fillets

Haddock fillets are really good. Excellent flavour, especially poached in milk.

Haddock loins

We use these loins to make a very tasty fish curry, marinading them in natural yoghurt, fresh ginger, lemon juice and curry spice. The haddock is the perfect fish for this recipe.
Equally delicious is to use it with the Atlantic salmon and prawns in a fish pie.
